If You're Playing A First Person Game,

Your player character will always have hands tied in front when captured.
This is due to how the camera view isn't able to see behind the character's back (unless you forcibly turn the head around...).
To better convey the story and easily let player know that the first person protagonist has been captured, they always need hands tied in front for the player to see.

Hands tied behind happens from time to time but I think it's rare.

A few cases I can think are tied to arm chairs as well. There's a Nancy Drew game where she gets her leg chained to a radiator after getting caught and her feet tied in another game. I think in that instance her hands are bound behind as well but we never see them.

You do see them! It's Ghost Dogs of Moon Lake. She also gets knocked out in that game.
